I get the ability to quickly change/adjust things, but it's totally unnecessary for such rigs imho.

Has anyone done away with these, and if so, what have you used in their place?

I use these to remove slop pretty much everywhere in all my rigs.

Probably could get PTFE or PVC sheets in 2mm thickness. PVC is very similar & slick like PTFE. Both cut easily with scissors. 0.2mm would require 10 layers to get 2mm thick, might be just as difficult to hold together as just a couple of washers.
If you need that much to remove slop, I would use stainless washers in the middle, leaving room on either side for the PTFE shims to reduce the friction. Because let’s face it, getting a whole stack of those lined up and held long enough to get the pin in is a tedious PITA for me and my large hands. 😂

Yeah - PITA for sure. I use hand tools.

I'll probably use SS washers.
What size is used for the hinge pins? (I don't need such a wide-ranging assortment)

I mainly use M4, some M5 and M3


But, that assortment is so Cheap and you get plenty of pieces..
You never know when you'll use the other sizes. Just good to have.

You’ll use a lot of 5 and 6mm i.d. washers/shims. You can order them by size individually for cheap when you figure out what you’ll be using most. But that assortment box is indispensable, as @Tex Koder said.
