Beef ribs going in later. Did a dry rub and letting sit uncovered in fridge. Kind of like a dry brine for 6 hours. Then going to soak at 140 for about 30 hours. Will finish in the broiler for dinner tomorrow.

Yep. Don't see them much in the store other than the small cut short ribs. Have to ask the butcher for them at the local markets.

Found these while grabbing some other items yesterday - and were on sale for $5.99 lb. Could not pass that up!

Buy whole bone in ribeyes when they go on sale! That's what I do.
