So, I wasn't mixing up the polarity I was doing something much worse. I was plugging the ESC wire into it instead of going into the fan port. A real momo moment. The worst part is I've successfully used it in the past which means I had forgotten this crucial step in the process.
And thank you to @sumguy75 for this thread as I won't be doing it again and can now play with some parameters.
