Hello!
What grease should be used between the steering block and the pivot ball?
I would prefer Hudy greases, but please give me a product link for a beginner!

Truly nothing is needed and that would be my recommendation. Make sure you do not overtighten. If they do not move freely there is something wrong but it's not because of missing lubricant.
If you insist, any dry-lube as mentioned above. Teflon or graphite based.
Any grease will attract dirt, and they will seize up or grind out due to dirt.

Grease is only used inside the diff, nowhere else on these rigs.

WD40 is the devil unless you soak your truck arms in it, but nothing else. It will destroy bearings but softens the plastic.
This ☝. It should stay dry and as clean as possible. There are hard rubber cups inside the hub that will get worn down prematurely if you start using lubricants which will eventually capture dirt. Loosen them up evry once and while and clean them. Don't over tighten and check regularly that they don't become too loose.
