I am a noobie and have had bad luck with this Vorteks thusfar.

I replaced the servo in it. I set the steering endpoints. But now with the new servo it drifts right relatively aggressively. Enough that if I don't compensate for the drift the car will drift enough that it will drive in circles.

What should I check next?
 
You have a steering trim knob on the transmitter. Adjust the trim till it goes
Steering Trim Adjustment doesn't help. Trim is at zero but adjusting it either way just either makes the issue more pronounced or moves the direction of the drift.

Did you make sure the servo was centered when you installed the servo
 
Do I have to unbind the TX and the RX to recalibrate the AVC?

Yes, servo is centered.
I don't have a Spektrum transmitter or the AVC system, I have a different version of stability system so I couldn't tell you exactly how to calibrate your gyro. I'm sure it would tell you the procedure in your manual. I do know that the Spektrum AVC system is a bit tricky and every step has to be done exactly correct or it won't work properly.
