I can get a deal on each making them about the same price. If you were choosing between the two, which would you go for?
 
I have the max6 in my Kraton and the programming car like it a lot. I would go with the max8 over the Blx. I ended up putting the blx system in my brothers Slash 4x4.

Can someone that knows these things decipher the specs for me? If I plan on racing my talion with 4s, what Kv should I run?

For racing, you want something like a 4075 or 4274 size motor, in 2000kv-2200kv. Too much power at the track can be an issue, so don't feel like you need the biggest most powerful motor to race. In my Kraton, I run the nero motor -4075 2000kv. At the track, I run 4s and set my throttle EPA to 60% for my son, 80% for me. Being smooth in and out of the corners is more important than speed down the main straight, so plan on slowing down for your first several races. Maybe the first dozen, even. :)

Slower is faster.

I just swapped out the BLX 185 ESC in favor of an Onyx 150 amp and the difference was huge.
I would say that the BLX 185 (stock tuning) is one of my least aggressive ESCs.
If the price is the same then it's definitely a no-brainer.
The BLX200 is supposed to be a rebranded max8 and the BLX185 a rebranded quikrun 150.
Just the added programming options alone would make the max 8 a better choice.
