If you are serious and into making changes to the differentials maybe do what I did which is buy/build 3 spares. Basically I have an extra center and two F/R diffs that I can change and build while still having the 3 in the truck. Makes it really fun and easy to do changes and see the difference.
 
My recommendation is to find the diffs you like and then stick with them. Both standard and the EXB are good diffs. EXB are slightly better as the cross pins are thicker and possibly better quality gears (not 100% on the gears). This way you can stock diff parts easy. Aluminum case on the center diff is a great upgrade for either set. Will need to maintain and service either set probably about every 20 packs or so. Things wear and loosen up. Sometimes it’s as simple as fluid change and a couple extra shims to take the slop out.
