Can someone tell me what is going on here why is the controller wheel controlling the fan speed and turning the car off?!

You most likely have plugs in the wrong ports on your RX and you need to configure your TX. That or your ESC is 1/2 shot..

It was driving fine for a while and then it just died do esc probably?
Something is shot. Time to troubleshoot. Grab a different RX first, then grab a different ESC. You don't have to install anything, just unplug and plug in new electronics on the side one at a time.
Sounds like your servo is the problem. If it’s seized up inside and you try to turn the wheel, it could be drawing a lot of power causing your fan to slow down. Sometimes it might be drawing so much power that it causes the esc to just shut down.

Yes i have a very small weak servo will that do?

Yea I would just use the weak servo to test to make sure it’s actually the servo causing other problems.
