Technically yea you could. But I'd go with a torquier, lower KV motor that should also run cooler.

You want a 3660 around 3000kv. That small motor and high kv will roast used for offroad conditions. You should also go with the larger 140amp esc. This way you have some room to grow down the line if you want to go 4s. If you are on a budget look for a Firma 3s or 4s system from Jennys or similar. Cost you around $100-$140 plus shipping. Just FYI the Arrma 4s systems only run on 3s & 4s lipo. The Arrma 3s systems will run 2s & 3s.

As others have said, Max10 G2 140 Amp and 3665 motor at either 3200kv or 2400kv are the way to go. 2400 for 4s or 3200 for 3s. If you don't want to shell out the extra dollars for Max10, Amain has the 10BL120 G2 combo with 3660 for 76.50 or something with coupon code NCF24 or NCF24A right now which would be great.
