After each run check for loose screws/broken parts/wheel nuts.
Check for binding in drive train.
Check tires for tears/gluing.
 
The rougher the terrain, and more agressive you are with it, the more in-depth preventive maintenance required. John8S states some good points, although I would keep a eye on the differentials as those take a real beating. Pop-off the main cover and inspect the teeth every few battery packs. Clean and apply grease (Lucas Red & Tacky) as required.

Also, check the mesh between the pinion and spur gear as those have been known to move after severe bashing. Adjust as necessary.
 
Cleaning/drying the car after each run.

Drivin in wet conditions dry the car inside and outside to prefent rust. Use a cloth and air compressor. Even do most parts are waterproof it aint no submarine.

Cleaning the car make sure to remove branches, sand etc from the car with air compressor.

Check screws after a run are they still connected or do you need to tide them.

Checking the connections on both engine and other electronics if they still are plugged in. My infraction motor fan connector is a little bit loose so i always check id its fully plugged in.
