The stock Notorious is 2050kv, and has the wild nature with the light front end,, what kv or combo could be used for less torque/wheelies and more planted speed.. any help would be greatly appreciated.. what is the combo of choice for a bit less torque? 2250kv ?

Try getting an aluminum diff case for the center diff and lighter diff fluid.

I switched to a Hobbywing Max8 with gen2 2250kv. It has a lot more torque and top-end than stock. If you don’t want to wheelie as easy then you could go up in pinion gear size and go down on esc punch among other things

This is the optimal combo for that rig but the factory electronics are great, what the OP needs to learn is throttle control with 6S power and short wheelbase.

If those stock ESC's have punch control, set it lower. Also, you don't have to pull that much throttle, everything is controlled from your finger.
