My amateurish attempt on reading this log.
Hard to tell the colors but follow the ripple line. It jumps up around 326s together with a big bump in motor HP output but, during full throttle, the ripple is down below 1V and almost negligible i.e. this has nothing to do with your high speed result. Only when a change in throttle occurs it become an issue.
Some possibilities and you know what changes were made between this issue and prior.
Gearing change? I heard no = eliminated
How ESC transfers power during lower throttle. - Firmware is a good guess.
Wiring intermittent? - No, it's solid evidenced by low ripple under full throttle.
CAP pack = Since caps really act as filters and it's all about timing, did you lengthen the wires or added connectors to the cap pack? That would change things up a bit.
You mentioned running with PP?, no idea how it transmits signals but wonder if it increases in a small stepping manner i.e. constant small increments in throttle that the ESC interprets as small incremental jumps that result in higher noise i.e. ripple. Probably can't see it on the log due to the low logging frequency. Higher capacity might fix that.
